Miso-Glazed Chicken Wings
Ingredients
- 8 chicken wings
- 1 tablespoon yellow miso*
- 1 tablespoon red miso
- 1 tablespoon mirin
- 1 teaspoon soy sauce
- 2 tablespoons cooking wine or sake
- 1 teaspoon brown sugar
- Chopped cilantro or celery to the taste
Directions
Mix all ingredients, marinate the chicken wings in the mixture, and refrigerate overnight. Grill the wings until the skin is brown and charred. Serve with finely chopped cilantro or celery (optional).
*Yellow miso is mild and sweet, while red miso is saltier and has a stronger flavor. Combining two kinds of miso enriches the flavor, though using either miso alone is also very tasty.
Sichuan-Style Chicken Wings
Ingredients
- 8 chicken wings
- 1 tablespoon honey
- 4 tablespoons soy sauce
- 2 tablespoons cooking wine
- 2 to 3 garlic cloves
- 2 tablespoons cooking oil
- 1 teaspoon Sichuan peppercorns, roughly ground or smashed
- 4 teaspoons dried chilli pepper flakes
- 4 teaspoons ground cumin
Directions
Finely chop the garlic and mix with the honey, soy sauce, cooking wine, and cooking oil. Rough-grind the Sichuan peppercorns and mix with the dried chili pepper and cumin. Mix all the dry and wet ingredients well, and marinate the chicken wings in it. Chill the wings in the fridge overnight. Grill them until the skin looks brown and charred.
Grilled Corn à la Taiwanese Night Markets
Ingredients
- 4 ears of corn on the cob
- 3 tablespoons shacha sauce
- 2 tablespoons thick soy sauce or oyster sauce
- 1 tablespoon sugar
- Chive or cilantro to taste (optional)
Mix the shacha sauce, thick soy sauce (or oyster sauce), and sugar in a small bowl. Remove the tough outer layers of the corn husk. Boil the corn, remove the remaining husk, and place the corn on the grill. Apply the sauce and grill the corn until golden and nicely charred. If you like, add some chopped chives or cilantro to bring out the flavor and lighten up the sauce.
